15 Mexican Food Recipes
I was looking through my recipes today, and realized I have over 15 Mexican food recipes built up. I live in New Mexico, so we have a fantastic bounty of Mexican food restaurants here, and I love trying to recreate classic Mexican dishes in my kitchen.
I have compiled a list of my favorite Mexican food recipes that I have written, to date, for anyone who is craving good Mexican food! Many of these recipes were taught to me by my mother, and the rest were inspired by dishes I have tried throughout New Mexico during my 29 years here. New Mexican food isn’t Tex-Mex, and it varies from traditional Mexican food. It is its own delicious hybrid, and I think you’re going to love the flavors.
Most of the recipes are simple and easy enough to prepare, even for the novice cook. All of 15 Mexican food recipes are homemade, using fresh, healthy and nourishing ingredients. Homemade Corn Tortillas – Fresh corn tortillas made from masa harina, salt and water. Super easy, super delicious.
Chicken Tortilla Soup – big chunks of chicken breasts, a mix of fresh veggies and a perfect blend of spices makes this a full-bodied soup that you’ll want to make over, and over again.
Authentic Red Chile Sauce – I have eaten my fair share of red chile sauce in my life. My mom learned how to make red chile sauce from Hatch natives. I’m sharing this authentic recipe!
Calabacitas – Perfect to utilize your fresh summer veggies! This recipe has squash, zucchini, tomatoes, jalapenos and tomatoes, all sauteed to perfection.
Chilaquiles – A tomatillo and chile “green salsa” sauce that is great to smother over burritos or dip fresh tortilla chips into.
Posole – A richly developed red chile and broth sauce, paired with big chunk of cumin-marinated pork, garlic and onions, makes this a pretty simple, but rewarding soup.
Easy Chicken Enchiladas – Quick and easy chicken enchiladas in less than 30 minutes.
Beef Fajitas – Fajitas are such a hit or miss in restaurants. Once you’ve had great beef fajitas, it’s hard to eat the mediocre ones. Here is a recipe for great beef fajitas you can make at home.
