Ahh, September is headed our way in a few short days, and I am already seeing pumpkin posts on Facebook.   It seems as each season comes to a close, there is a rush of excitement towards the next season that awaits us.  

Fall is probably my favorite time of year. I have usually been so miserably hot by the end of August, that I am anxious to see cooler weather.  And if I’m being perfectly honest, that garden that I was raving about three months ago has grown so large, and attracted so many bugs, I am also eager to see the natural progression of harvest time pass me by. 

I would be perfectly satisfied if I don’t see another cucumber for the next 6 months.  

While I won’t be sharing any pumpkin posts today, I did want to grab a hold of the tastes of fall with a mini-cake.  I opted to honor fall with fresh crisp apples, a blend of fragrant fall spices, and a refreshing citrus glaze to balance it out.

Apple Spice Cake with an Orange Cream Cheese Glaze


  • 2 apples, peeled, cored and diced into 1/4″ cubes
  • 1 cup maple syrup
  • 2 eggs
  • 1/2 cup brown sugar 
  • 1 tbsp vanilla extract
  • 2/3 cup unsalted butter, melted
  • 2 cups flour 
  • 1 tsp baking soda 
  • 1 tsp baking powder 
  • 2/3 tbsp ground cinnamon 
  • 1/3 tsp ground ginger extract
  • 1/3 tsp salt 
  • 1/3 tsp ground nutmeg


  • 4 ounce cream cheese
  • 1 cup powdered sugar
  • Juice from one orange
  • 2 tsp vanilla extract

Preheat oven to 350 degrees.  Butter and flour a bundt pan or a mini fluted pan.  

In a large bowl, combine apples, maple syrup, eggs, brown sugar, vanilla extracted and melted butter.  In a medium bowl, combine remaining cake ingredients, mixing until well incorporated.  Pour dry ingredients into apple and maple syrup mix, and mix well. 

Pour batter into prepared pan, and bake in preheated oven for 55 – 60 minutes for a bundt pan, or 35 – 45 minutes for the mini fluted pan.  Insert a toothpick into the cake, and when it comes out clean, the cake should be cooked through. 

Allow to cool, and then turn out onto a wire rack to cool.  

To make the glaze:  

Beat cream cheese until an electric mixer until it becomes creamy. Add in powdered sugar, gradually, beating well after each addition.  Add in orange juice and vanilla extract, and beat an extra 5 seconds, or until smooth. 

Drizzle glaze over cake(s), and enjoy!
