The Best Pancake Recipe

I was planning on making pancakes last Saturday.  The Friday before, I was trying to convince/coerce an incredibly sleep-deprived, grumpy, but “not tired!” Elle to go to sleep.  I promised her that in the morning, we would make the best pancake recipe for breakfast, if she would just. go. to. sleep.  It didn’t work… she was still grumpy, and stayed up an extra 30 minutes, but she did eventually fall asleep.  

The first words out of her mouth the next morning were, “Are you making pancakes for breakfast?”

She has what I refer to as a selective memory.  She doesn’t remember that I asked her to pick up her room, 3 minutes later, but she wakes up remembering promises of pancakes. 

I can’t say I blame her. 

The Best Pancake Recipe

  • 2 tbsp butter
  • 1 cup unbleached flour 
  • 2 tbsp organic sugar cane (or sugar) 
  • 1 tsp baking powder
  • 1/2 tsp baking soda 
  • 1/2 tsp salt 
  • 3/4 cup buttermilk (make your own buttermilk)
  • 2 tbsp butter, melted
  • 1 egg

Heat 2 tbsp of butter in a large skillet over medium heat. 

Combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl.  Add in buttermilk, melted butter and egg, and mix until fully incorporated.  Cook pancakes until lightly browned, and cooked through.  Top with butter and pure maple syrup

These pancakes are light, fluffy, and golden-crispy on the edges.  The warm, melted butter and sweet maple syrup will make this the best pancake recipe you’ve ever tried.  If you have little ones, I have a little warning — once you start making these pancakes, they will wake up every morning, begging you for this delectable breakfast.
