Green Tea and Coconut Popsicle

A couple years ago, I discovered the wonderful world of green tea.  I had heard that drinking green tea regularly was healthy, but it wasn’t until I did a little more research that I realized how beneficial it actually was.

There have been numerous studies done on the health benefits of green tea, and here are some of the ways that it can benefit the drinker:

  • Consumption of green tea has been shown to lower total cholesterol while raising HDL (good) cholesterol (source).
  • Cancer rates are typically lower in countries where the population regularly consumes green tea (Japan, for instance).  Some early research points to the polyphenols present in green tea that may act as a preventative against cancer.  
  • Consumption of green tea may help individuals who suffer from Crohn’s disease and ulcerative colitis by reducing inflammation. 
  • Green tea may benefit people with diabetes by helping to control blood sugar levels.
  • Green tea may help stimulate weight loss by boosting metabolism and helping the body burn fat. 

As you can see, there may be a lot to be gained by making green tea part of your regular diet!  

I have become especially fond of Bigelow’s Green Tea K-cups that I found at Walmart.  I had made a special trip to Walmart one Saturday to pick up some tea, and among their k-cup selection, I was delighted to find Bigelow’s tea available.

I still love steeping teas, and will buy their tea bags as well, but I just find the k-cups more convenient for my work environment, and Bigelow’s teas have such wonderful flavor.  Everyday around mid-morning, I brew a small cup, add a little raw honey, and it helps me focus and stay energized until lunch time.

Why choose Bigelow?

Bigelow is an American company, their products are 100% American made and manufactured by an American family.  They are also available at an American retailer: yep, Walmart!   They have a Tea Plantation based in Charleston, which is America’s largest working tea garden!

I haven’t ever been to the east coast, but I hope to go there someday.  Bigelow allows weddings, tours and even music festivals on their Tea Plantation, which is rich with Southern culture and is a piece of American history.  I imagine it is beautiful there! 

Bigelow is also philanthropic (which I love!).  As of today, they have sent almost 4 million bags of tea to oversea troops through their Bigelow’s Tea for Troops program

Green Tea and Coconut Popsicles 

As a huge fan of green tea, I wanted to create some healthy treats for the warmer months coming up.  I made these delicious green tea and coconut popsicles, which are ridiculously easy, and not to mention, healthy! 

Here’s my recipe:

  • 1 cup brewed green tea
  • 1 cup coconut water
  • 1 tbsp honey (raw and local is best)

Combine all ingredients in a bowl.  Pour popsicle mix into a clean, empty ice tray.  Place a layer of plastic wrap on top, and pull tight.  Insert a toothpick into the center of each tray, and place in the freezer until frozen solid.  

When ready to enjoy, just remove the plastic wrap, and you have 12 individual popsicles!
