Black Bean Dip Recipe Easy 

If you’ve been to my site before, you probably know that I looove Mexican food.  I have created a ton of Mexican food recipes to share all of my favorite homemade dishes.  

Black beans have always been a bit of a touchy food in my house, though.  My best friend loves creating dishes out of black beans, but my husband has not historically been a huge fan of that type of bean.  Over the years, I have tried introducing it in different ways, but he has never taken a liking to the black bean. 

Well, I finally found a recipe to turn his distaste for black beans!  Behold the Black Bean Dip Recipe Easy done. 

Black Bean Dip Recipe Easy


  • 2 tbsp olive oil 
  • 1 onion, finely diced
  • 1-3 jalapenos, seeded and diced
  • 3 cloves garlic, minced
  • 2 medium tomatoes, cored and diced
  • 1 tbsp chili powder 
  • 4 cups black beans
  • 3/4 cup water
  • 1 tbsp apple cider vinegar
  • 1 cup corn kernels
  • 1 cup sharp cheddar cheese
  • 1 cup colby jack cheese
  • salt and pepper to taste

Preheat oven to 425 degrees.  Grease a 1.5 qt baking dish.  

In a large skillet, heat olive oil over medium-high heat.  Add onions and jalapenos and saute until soft, about 5 minutes.  Add in garlic and tomatoes and continue to saute an additional 30-60 seconds. Sprinkle with chili powder, and add in black beans and 3/4 cup of water.  Bring to a boil, and cook until the water reduces by half, about 5 minutes. 

Transfer bean mix to a blender or food processor, add vinegar, and process until mixed and smooth. 

To the bean mix, add corn, half of cheeses and salt and pepper.  Pour into greased 1.5 quart baking dish, and sprinkle remaining cheese on top.  Bake in preheated oven for 15 minutes, or until cheese is melted and bubbly.  

Serve with tortilla chips and a fresh salsa recipe
