I love my coffee.  A hot fresh cup of coffee in the mornings is very much a beloved part of my morning routine, and I look forward to that cup of coffee from the second I wake up.  After lunch time, I start to feel the afternoon dip in energy, and tend to crave another cup of coffee.  The problem is that I usually don’t want a hot drink in the afternoon. 

I found a happy solution to my mid-afternoon energy crash by making coffee smoothie recipes!  It is a great way to get some caffeine, with the addition of fresh fruits and healthy ingredients, to get me through my workday. 

Below are my 3 favorite coffee smoothie recipes.  My favorite coffee to use in these coffee smoothie recipes is Folgers instant coffee.  I am a huge fan of how quickly I can brew a fresh cup of coffee, while creating the least amount of mess!  Folgers Instant Coffee can be quickly made on my lunch break, then I’ll add in some of my favorite fresh ingredients to create a delicious smoothie to bring back for the second half of my work day.

Peanut Butter, Chocolate & Coffee Smoothie

  • 3/4 cup whole milk
  • 1/2 cup cooled Folgers Instant Coffee
  • 1 frozen banana
  • 1 tbsp cocoa nibs
  • 1 tbsp peanut butter

Combine all ingredients except peanut butter in a blender, and blend until smooth.  S tir in peanut butter and enjoy!

Coconut Coffee Smoothie

  • 3/4 cup cooled Folgers Instant Coffee
  • 1 cup coconut water
  • 1 banana
  • 1/2 cup uncooked oats
  • Honey to taste
Combine all ingredients in a blender, and blend until smooth.

Creamy Banana-Free Coffee Smoothie

  • 1 cup whole milk
  • 1/2 cup cooled Folgers Instant coffee
  • 1/2 avocado
  • 2 tsp cocoa powder
  • 1 tsp honey
  • 1 tsp vanilla extract
  • 5 ice cubes

Combine all ingredients in a blender, and blend until smooth.

I love these recipes, because they’re quick, easy and a healthier (and less expensive) alternative to a frappuccino!  You will feel good about making these for an afternoon or even morning snack!
