Corned Beef and Cabbage Egg Rolls

St. Patrick’s Day is right around the corner and one of the most iconic Irish dishes has to be corned beef and cabbage.  And not that I need an excuse, like St. Patrick’s Day, to eat corned beef and cabbage, but it’s imminent appearance has me craving corned beef and cabbage.  

I also happen to be on an egg roll kick lately.

It may sound whacky, but corned beef and cabbage egg rolls are so good. They actually aren’t too far off a traditional Chinese egg roll, since they share a similar base (cabbage), but they have an Irish taste.

Corned Beef and Cabbage Egg Rolls

  • 2 tbsp olive oil
  • 1 cup shredded cabbage
  • 1/2 cup carrots, shredded
  • 1/2 cup onion, diced
  • 1/2 cup corned beef, chopped
  • salt and pepper, to taste
  • egg roll wrappers
  • Oil for frying

In a large pan, heat olive oil over medium heat. Add in cabbage, carrots, and onion, and let saute for 5-10 minutes, or until veggies are starting to wilt and soften. Stir in corned beef and season with salt and pepper. Remove from heat.

Grab an egg roll wrapper, and put around 2-3 tbsp of mix in the center. Roll the egg roll, tucking in the sides, and then dip your finger in water, and trace the edges of the wrapper, and finish rolling to seal the edges. 

Warm 1″ of oil in a heavy pan to 375 degrees. Gently place corned beef and cabbage egg rolls in the pan, and brown on all sides. Remove from oil and lay on a paper-towel lined plate to cool down. (You can also bake them at 400 degrees for 18 minutes, if you want them to be a wee bit healthier)

Serve with thousand island dressing or a tbsp of mayo mixed with a teaspoon of horseradish, for a dipping sauce.
