Creamy Mustard Smothered Pork Chops

Since the time has changed, I have been struggling to cook dinner in the evenings.  I don’t know if the cold weather makes me lazy, or if getting off work when its dark depletes the motivation in me, but it’s been a challenge, and we’ve been resorting to eating out more than normal.  

I decided today that I need to make a renewed effort to preparing and eating home-cooked meals, because it saves money, it tastes better, and it’s healthier for my family.  However, I don’t want to set myself up for failure… so I have developed some super easy, super quick dinner recipes to make, that I will make, even when I’m feeling lazy. 

The first of these meals is creamy mustard smothered pork chops.  And… oh mmmm gee, they’re good.   I was actually surprised at how tasty they turned out, considering how few ingredients it took, and how quickly it came together.  Even my husband, who is not a huge fan of pork chops, was impressed and said, “wow, these are awesome!”. 

So if you find yourself short on time or motivation, like me, but still want delicious home-cooked meals, you need to make these creamy mustard smothered pork chops.  Tonight. Or, at least, some time this week. 

Creamy Mustard Smothered Pork Chops

(Serves 4)

Ingredients:

  • 2 tbsp olive oil
  • 4 thin bone-in pork chops
  • 1 cup chicken broth (homemade chicken broth is best)
  • 3 tsp dijon mustard 
  • 3/4 cup heavy cream 

In a large pan, warm olive oil over medium heat.  Add in pork chops, and cook for 4 – 5 minutes on each side, until browned and cooked through. Remove pork chops and place on a plate. 

Add chicken broth, dijon mustard and heavy cream to the pan.  Bring to a gentle boil, while whisking to combine.  Cook for 1 minute, then reduce heat to low.  Return pork chops to the creamy mustard sauce, and keep on low, until ready to serve.

I served these along side some creamy mashed potatoes and bacon and beer cabbage (I’ll post that recipe later this month!), and it felt like a feast! So much better than eating out, and much cheaper.
