This is my favorite time of year. The leaves are starting to turn beautiful hues of orange, auburn, and gold, the weather is just a little cooler, and the air is crisp. I love all of the seasons, but fall may be my favorite.

For my family, we love curling up together on the couch, watching movies and spending time together. I also love utilizing my crock-pot this time of year, so I can prepare our dinners in the morning, and come home to a warm, home-cooked meal without the work!

This week, I decided to prepare a hearty, wholesome crockpot potato soup with a little spin. I added some Hatch green chilies and corn kernals, making it a mix between a potato soup and a green chile corn chowder. The results? Amazing!

I used Simply Potatoes Shredded Hash browns in this recipe, since they are fresh, never frozen, and cut down on the peeling and shredding on busy mornings! I found them in the refrigerated dairy section at my grocery store, checked to make sure they were made with real ingredients, and grabbed them for my recipe! Okay, on to the recipe!

Crock Pot Potato Soup with Corn and Green Chile

  • 6 strips bacon
  • 1 onion
  • 2.5 cups Simply Potatoes Shredded Hash Browns
  • 1/2 cup diced green chilies (optional)
  • 6 cups chicken broth
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1.5 cups heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup corn kernals
  • salt and pepper to taste

Cook bacon until crisp. Put the cooked bacon in the refrigerator for later. In the bacon grease, saute the onions until translucent. Transfer the onions and bacon grease into the crock-pot. Add simply potatoes shredded hash browns, green chilies, chicken broth, cumin, and garlic. Cook on low for 4 – 6 hours.

1 hour before serving, add in heavy cream, shredded cheese, and corn. Cook an additional hour, season to taste with salt and pepper. When ready to eat, crumble on reserved bacon and serve with crusty bread or crackers.
