I have a picky eater.  

Despite all my best efforts to get her to love new foods as much as I do, she is just not an adventurous eater.  The number of foods my 4-year-old likes could probably be counted on two hands.  

A few weeks ago, we started struggling with after-school snacks. Elle would come home from school wanting snacks we didn’t have, or snacks I didn’t want her eating, and it was making us both pretty miserable.  My mom is a teacher, and came up with the idea of selecting 3 snack choices, writing them down, and then letting her choose which after-school snack she would like to eat.  That way she gets to decide which snack she wants to eat, but I get to choose which snacks she gets to pick from. 

It worked out great! 

I like to make quick and easy snacks that she likes, and I try to include fruit in them, whenever possible.  My daughter loves yogurt, so I keep Yoplait Simply Gogurt® in our fridge, along with a variety of fresh fruit, string cheese and air-popped popcorn.  

Her current favorite snack is Frozen Yogurt Bark.  It’s super simple, only takes a minute of prep time, and kids love it!  It is also easy to customize for your child’s favorite flavors.

Frozen Yogurt Bark

  • 4 cups Yoplait yogurt (you can use original or Greek) 
  • A cup of fresh fruit 
  • 1/4 cup shredded unsweetened coconut

Line a baking sheet with parchment paper.  Spread yogurt over the parchment paper, and even out.  Sprinkle on fresh fruit and shredded coconut.  

Place in freezer until frozen solid, about an hour and a half.  Remove from freezer, pull away parchment paper, and break the frozen yogurt into smaller pieces.  Keep frozen until ready to enjoy!

    This looks so yummy. What a great way to make a healthy snack, that doesn’t really seem like a healthy snack. We love Yoplait yogurt and always have it in the house. I will have to give this a try!

    You (and your mom) are simply brilliant! Great idea to let your daughter choose from acceptable snacks. And the frozen yogurt bark sounds like something my teens (and I) would love. Can’t wait to whip a batch up.
