Mornings around my home can be chaotic, to say the least. Getting myself up and ready for work, and getting my two kiddos ready for daycare, takes quite a bit of strategic planning! I also try to make a hearty breakfast in the morning, because eating meals together as a family is important to me.

And September is National Family Meals Month, so if you’ve been wanting to incorporate more family meals in your home, this is the perfect time to do so!
I know how challenging it can be to find time to cook and eat breakfast in the morning, believe me! The trick is to find delicious meals that are quick to put together, and that your kids will love eating too. One of my favorite quick breakfasts is ham, egg and cheese breakfast quesadillas. They have amazing flavor, are easy to customize for different taste preferences in your household! I also love using HORMEL® Cure 81 Ham, since it is precooked and has such great flavor. It makes the perfect breakfast protein, because all it needs is to be warmed up, and it’s ready!
If you need a little inspiration, here are some more Easy Recipe Ideas! I like to add green chile to my breakfast quesadillas, because I think green chile makes everything taste better. My four-year-old is not as big of a fan, so she does ham, egg and cheese breakfast quesadillas. You can also expand on this to add some wonderful fresh veggies, like mushrooms, onions, or bell peppers.
Makes 4 quesadillas
- One dozen eggs
- salt and pepper to taste
- 2 cups Hormel Cure 81 Ham, cubed
- 4 cups shredded colby jack cheese
- 4 tbsp butter
- 8 flour tortillas
Crack eggs into a medium-sized bowl, add salt and pepper, and whisk. Cook eggs in a pan over medium heat until scrambled. When eggs are almost done, pour in the cubed ham, and stir and continue cooking for another minute to warm up the ham. Transfer to a large bowl, and keep warm.
In the same pan, melt 1 tbsp of butter, reduce heat to medium-low, and place one flour tortilla in the pan. Top the tortilla with 1/2 cup of cheese, followed by 1/4 of the egg and ham mixture and top that with another 1/2 cup of cheese. Lay the second tortilla on top, and cook for a minute or two, to get the cheese to melt, and flip. Cook another minute or two on that side, and transfer to a plate. Repeat for remaining 3 breakfast quesadillas.
