I was beyond excited to take a road trip this weekend to visit my mom! She lives in the grand city of Roswell, NM (yes, the same place that aliens supposedly crashed), which is just a short hour and a half drive, which was greatly enhanced by listening to the audiobook, Bossypants.
Over the weekend, we did a little shopping, visited some popular alien tourist places (more on that next week), and COOKED! Cooking is one of our favorite things to do together. Luckily for us, Cinco De Mayo happened to fall on this weekend, giving us an excuse to go all out with one of our favorite cuisines. We spent two splendid hours in the kitchen, sipping Coronas and creating a phenomenal Cinco De Mayo feast.
Our feast included chips and roasted tomato salsa:

Whew! Talk about good eating!! I am so excited to share all of these recipes with you, but after being away from home all weekend, I have an insane about of laundry to attend to. I promise to post the recipes in the next couple weeks. Until then, Happy Cinco De Mayo!
