Heirloom Tomato Salad

What do you do when life gives you heirloom tomatoes?

This was a question I was asking myself this morning.  I received beautiful, organic heirloom tomatoes from my bountiful basket.  They are really so pretty, I don’t want to eat them.  I want to somehow preserve them, in this state, so I can look at them every day.  Maybe like a statue, or a piece of art.  At some point, I had to give up any notions of preserving tomatoes, and moved onto finding a way to highlight their wonderful flavor, and do them justice. 

Since I am a HUGE fan of everything that has balsamic vinegar on it, I figured I would slice those beauties, give them a little TLC, and let their true flavor shine.  

Heirloom Tomato Salad 

  • 1 clove garlic, minced 
  • 1 tsp sea salt 
  • 1 tbsp capers (*optional)
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil 
  • 3 heirloom tomatoes

Add garlic, sea salt and capers to a small bowl.  Slightly mash and mix together.  Add in balsamic vinegar and oil, and mix. Slice tomatoes thinly, and lay out on a plate. Pour the sauce over the tomatoes, and allow to marinate for 15 minutes, before enjoying. 

You can skip the capers, if you want, but they have such wonderful and bold flavor, they add a lot to this tomato salad. 

These are a delicious, incredibly flavorful, bright and salty appetizer.  I am entertaining the idea of baking these the next time I try them, with a little mozzarella and parmigiano-reggiano on top.  Maybe a little shredded basil.  Mmm…. this is why I love cooking.  You can take a recipe, and spin it off in a hundred different directions!
