Homemade Vegetable Beef Soup

I always get super anxious around this time of year.  Spring is just around the corner, and I want to get outside and plant my garden, start up the grill and enjoy warmer weather… but the weather is not warm.  

It’s cold.  

I could complain about the cold, and feel the winter blues, or I can just go ahead and embrace the season, and all that it has to offer.  One of the best things about winter is the abundance of warm, hearty, homemade soups.  I love creating soups with fresh, yummy vegetables, well-seasoned chunks of meat, and a good homemade broth. Once you start making your own soups, using healthy, fresh ingredients, you will never, ever, ever want to buy the canned versions again. 

Today, I happened to have all of the ingredients on hand to create the perfect homemade vegetable beef soup, and wanted to share this wonderful recipe with you!

Homemade Vegetable Beef Soup

  • 2 tbsp olive oil
  • 1 pound stew meat, leftover shredded roast or ground beef
  • salt and pepper, to taste
  • 2 cups chopped carrots  
  • 1 cup celery 
  • 1 onion, diced 
  • 2 potatoes, peeled and diced
  • 1 cup corn kernels
  • 4 cups diced tomatoes 
  • 3.5 cups beef broth 
  • 4 cups water
  • 2 bay leaves 
  • 2 tsp garlic powder 

Heat olive oil over medium heat.  Add in meat, season with salt and pepper, and brown on all sides.  Remove from heat and set aside.  

In the same pan, add carrots, celery and onions and saute until starting to brown.  Add another tbsp of olive oil, if necessary.  Add in stew meat, potatoes, corn, tomatoes, beef broth, water, bay leaves and garlic powder.  Bring to a boil, then reduce heat and simmer for about an hour and a half, until meat is tender.*

*Note, if the beef is already cooked, or you’re using ground beef, you can cut this down to 30 minutes, until the potatoes and ground beef are cooked through. 

Serve with delicious easy yeast bread or homemade tortillas

Homemade Vegetable Beef Soup 2

I cooked a sirloin tip roast earlier in the week and needed to use it up, so I added the shredded beef to this soup for the meat.  It was delicious! You can get creative with what cut of meat you want to use, or completely omit it.  I took the leftover soup, stored it in ziploc baggies, and froze it for a future date!
