Mediterranean Pizza

Last summer, I wrote a yummy recipe for tuscan herb vegetables, and it has quickly become a family favorite! While I was looking at that recipe the other day, I had a… we’ll call it a pregnancy craving… for my Tuscan herb veggies on top of homemade pizza dough.  It sounded like a match made in pregnancy heaven, and I knew I had to make it. 

The flavors are slightly different, because it is February, and summer-time vegetables haven’t hit the grocery store yet, so I used the veggies I could find.  However, this is an easily adaptable recipe, so you can swap out any veggies or add in any extras that you want!

For the Crust

  • .25 ounces active dry yeast
  • 1 cup warm water 
  • 2.5 cups flour 
  • 3 tablespoons olive oil 
  • 1 tablespoon salt 

For the toppings

  • 4 tablespoons olive oil
  • 1 medium onion, sliced 
  • 1 – 2 zucchinis, sliced
  • 1/2 cup sliced tomatoes
  • 1 tablespoon Mediterranean seasoning 
  • salt to taste
  • 1/2 cup Parmesan cheese

In a small bowl, combine active dry yeast and warm water, and allow to set for 10 minutes.   Add in flour, 3 tablespoons olive oil and salt.  Mix until smooth, and knead for 3 – 5 minutes.  Cover with a towel, and let rise for 30 minutes.  Meanwhile, warm 2 tablespoons olive oil in a saute pan over medium heat.  Add onions, and saute for 5 minutes, until starting to soften.  Add in zucchini and tomatoes, and continue cooking another 5 minutes, until all veggies are soft (or until desired doneness). 

Preheat oven to 350 degrees.  Turn out pizza dough onto a pizza stone or baking sheet.  Sprinkle lightly with flour, and use a glass or rolling pin to roll out the pizza into a thin circle.  Bake in preheated oven for 5 minutes, then remove. 

Top with remaining 2 tablespoons olive oil, and sprinkle with salt.  Top with sauteed veggies and Parmesan cheese, spreading out evenly over the crust.  Bake in oven for 10 – 15 minutes, or until dough is cooked through and cheese is melted.
