Quinoa is an ancient “psuedo-grain” that was domesticated thousands of years ago, near Lake Titicaca, high on the plateaus of the Andes. Quinoa was domesticated between 3,000 and 4,000 years ago, but there is evidence that shows it may have been cultivated as long as 5,200 to 7,000 years ago.
Quinoa is a grain crop, but it is naturally gluten-free, and is closely related to beetroots, spinach and tumbleweeds. The part of the quinoa plat that is eaten is actually the seed.
Why is quinoa good for you?
Quinoa is high in protein and fiber and contains essential amino acids, including lysine, calcium, phosphorus and iron. In fact, quinoa has more protein per 100 calories than brown rice, barley or millet.
Quinoa is a good source of riboflavin, which can help reduce migraine frequency and may improve energy metabolism within muscle cells. It is alkaline-forming, and as previously mentioned, it is gluten-free, which is a plus for people who are gluten intolerant or those who have Celiac disease.
Quinoa is a complex carbohydrate that is low on the glycemic index, which makes it a great grain for those interested in incorporating healthier grains in their diet.
Not surprisingly, quinoa is considered a “superfood”.
How to prepare quinoa
Quinoa is easy to prepare, and can be prepared in a similar manner to rice. You can easily and quickly prepare quinoa by boiling it in water or chicken broth.
But if your’e in the mood to be creative, try these other preparations of quinoa:
- Toss cooked quinoa with broccoli, carrots, green beans and tofu cooked in coconut curry sauce
- Top cooked quinoa with milk, honey, almonds and blueberries for a nourishing breakfast
- Stuff bell peppers with ground turkey, quinoa, corn and pepperjack cheese
- Chocolate Sour Cream Quinoa Quickbread
- Mediterranean Quinoa Salad
- Quinoa Veggie Burger
What to look for in buying quinoa
When buying any food, you should consider the source and quality of the product you are purchasing. I personally purchase quinoa, along with other whole grains, from Bob’s Red Mill.
