My mom is visiting for the summer, and is helping watch our baby boy (I know, I have the best mom ever), and while she is here, she is spoiling us with the best home-cooked meals. Her specialty is Mexican cooking. She is a look-in-the-fridge-and-make-her-own-recipe kinda cook, and her food always tastes amazing. Truth be told, she’s a much better cook than I am.
A few days ago, I came home on my lunch break to find she had made this amazing Spanish summer salad for lunch! She used these Wacky Mac veggie spirals I bought for my picky daughter (trying to sneak veggies into her meals!) and paired it with cubes of fresh mozzarella, green olives, tomatoes and Spanish seasoning. It is so tasty and pretty simple to throw together.
I asked her for the recipe, so I can make it again, and she was kind enough to share her Spanish summer salad. This would be a perfect pasta salad to chill and bring cold to a picnic!
- 2 cup uncooked rotini pasta
- 1/2 cup cubed mozzarella
- 1/2 cup diced tomatoes
- 1/4 cup diced green olives
- 1/4 cup good olive oil
- 1/8 cup red wine vinegar
- 2 tbsp Dijon mustard
- 1 tbsp honey
- Juice from 1/2 a lemon
- 1 tsp paprika
- 1 tsp garlic powder
- salt and pepper to taste
Cook pasta according to the directions on the package. Strain and add to a large bowl. Stir in mozzarella, tomatoes, and green olives.
In a separate bowl, combine olive oil, red wine vinegar, Dijon mustard, honey, lemon juice, paprika, garlic powder, salt and pepper. Pour dressing over pasta mixture and stir to combine.
