Taco Pizza

Back when I was in college, there was a local pizza joint that used to serve up taco pizzas.  My brother-in-law was particularly fond of them, so anytime he came to visit, we would order a few taco pizzas and devour them.

It’s been several years since we have had one, and about a week ago, I was making tacos, and thinking that I would really enjoy a taco pizza!  I also thought I could probably convince my picky preschooler to try it, since she loves tacos and loves pizza… and maybe, if I’m really lucky, she won’t try to pick off the lettuce and tomatoes!

This pizza is pretty simple to throw together, and has a ton of flavor.  It’ll quickly become a family favorite, so be prepared to add it into your regular menu rotation!

Taco Pizza

For the Crust

  • 1 (.25 oz) package of active dry yeast
  • 1 cup of warm water
  • 2 cups unbleached flour
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 tbsp sugar
  • 1 tsp chili powder (optional)

For the toppings

  • 1 pound ground beef
  • 2 tbsp taco seasoning (here is how to make your own taco seasoning blend)
  • 2 cups refried beans
  • 2.5 cups monterey jack and cheddar cheese, shredded
  • 2 cups shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced black olives
  • 1 cup salsa (here’s how to make homemade salsa)

In a small bowl, combine yeast and warm water, and allow to sit for 10 minutes, until creamy.  In a larger bowl, combine flour, olive oil, salt, sugar, chili powder and yeast mixture, and stir well mixed and a dough forms.  Cover with a clean towel, and allow to rise for 30 minutes.

Meanwhile, preheat oven to 375 degrees.  Brown ground beef with taco seasoning, in a pan over medium heat, until cooked through.

Once the pizza dough is risen, turn dough out onto a slightly floured surface, and form into a pizza shape on a baking sheet or pizza stone. Bake in preheated oven for 10 minutes, then remove from oven.

Spread refried beans onto pizza dough evenly.  Top with cooked ground beef and top with shredded cheese.  Place pizza back in preheated oven, and bake an additional 5 – 7 minutes.

Top with shredded lettuce, tomatoes, black olives and salsa (if desired), and serve warm!
