I, on the other hand, like to infuse the potatoes with flavor right from the beginning! I don’t wait until the end of the recipe to add the tastiest ingredients. Instead, I season in layers, starting from step one.

The easiest way to make the best mashed potatoes is to boil them in chicken broth (or vegetable broth if you don’t eat meat) with some roughly chopped onion. The potatoes will absorb all the amazing flavors of the broth and onions as they cook, giving you the perfect base to build a mouth-watering dish.
Chicken broth is packed with many delicious ingredients that pair well with potatoes. Aside from chicken, most broths include vegetables like carrots, celery, onion, and salt and herbs. Boiling your potatoes in, essentially what is flavor-infused water, will allow them to pick up all that deliciousness, so you get the perfect bite every time.
Boiling potatoes in chicken stock with onions can also make the final product creamier. I know that everyone likes their mashed potatoes to taste and feel differently – if you want to avoid that graininess that this dish has sometimes, then this is the way to do it!
Because the chicken broth makes the mashed potatoes creamier, you can get away without adding cream or butter to this recipe. Of course, you can add those ingredients if you want! But this is a great way to skip the extra calories and fat.

Ingredients
- 2 cups chicken broth
- 2.5 lbs potatoes peeled and chopped into 1-inch cubes
- 1 white onion roughly chopped
Instructions

Place the chopped onions, potatoes, and broth ina large stock pot

Bring the water to a boil

Reduce the heat to medium. Cover and cook for 10 minutes or until the potatoes are fork tender

Do not drain the potatoes and onions. Instead, mash or whip everything together in the stock pot

Transfer to a serving dish and enjoy!
If you want a more dramatic flavor profile, you can also add chopped garlic and bay leaves to the water. Just make sure you remove the bay leaves before mashing!
