Bacon Wrapped Apricots & Jalapenos
This is a savory, spicy and sweet appetizer that sounds a little strange, until you try it.
Last week, when I received my Bountiful Basket, I found myself with 18 fresh apricots. I was making my grocery list, and couldn’t figure out how I would use up all those apricots over the course of a week or two. I thought about eating them fresh, but I knew I would never eat that many in a week, and my husband and daughter wouldn’t be any help!
I looked on Pinterest, and found a ton of recipes for bacon-wrapped apricots, and they all looked amazing! Once I was looking at the actual recipes though, I saw that they were all made with dried apricots, instead of fresh apricots.
But I didn’t see any reason for that to stop me from making bacon-wrapped apricots with fresh ones!
I also happened to have some jalapenos in my fridge that I needed to use up, so I chopped them and decided they would be a welcome companion for my fresh apricots.
Then I brushed on a layer of pure maple syrup, while they were still hot, and BAM! Delicious, savory, spicy, sweet, and sooo perfect, they were gone in a flash.
Bacon Wrapped Apricots & Jalapenos
Make 32 bite-size appetizers
- 18-21 apricots
- One package of bacon
- 5 – 6 jalapenos
- 1/4 cup pure maple syrup
Preheat oven to 375 degrees.
Peel the apricots, and cut the flesh away from the seeds in 3 pieces.
Cut the bacon pieces in half, so you have 32 pieces.
Remove the stems and seeds from the jalapenos, cut in half vertically, and then cut each piece into thirds. You should have 6 strips from each jalapeno.
Wrap 2 pieces of apricots and a slice of jalapeno with a piece of bacon. Secure with a toothpick and lay on a baking sheet. Repeat until you have 32 appetizers.
Bake in preheated oven for 25-30 minutes, or until bacon is cooked and crisp.
A few minutes before the bacon wrapped apricots are cooked, warm maple syrup in a small saucepan, over medium heat. Once bacon wrapped apricots are finished, brush with warm maple syrup.

I love this as a lighter alternative to bacon-wrapped cheese stuffed jalapenos. I bet the sweetness of the apricots adds an amazing dimension to this appetizer. Thanks for sharing the recipe!
