Bacon Wrapped Potatoes with a Sriracha Dipping Sauce
The teachers at my daughter’s preschool host a potluck every December, and all of the parents get together and bring their favorite dishes. There are a few reasons I love potluck. First, there is lots of food, and I love food in large quantities. Secondly, I get some of the best food ideas from other cooks! This potluck was full of yummy food, from homemade macaroni and cheese to vegan chili. There was quite the variety! Of course, one of the first things I saw was a bacon-wrapped-something. At first, I thought they were bacon wrapped pineapples, and I thought, “well, that’s a great idea!”, but when I bit into it, I was delightfully surprised to find it was a potato!
The potato was soft and tender, rubbed with rosemary (which is a winning combination!), and the outside bacon was crispy and salty. The combination was harmonious, and had I not been sharing dinner with 75 other people, I probably would have picked up the whole plate and ate them all. Actually, considering I’m pregnant, it is surprising to me that I was able to resist doing just that!
What I did instead was came home, and recreated them the very next day. And I DID eat that entire plate. All 2 dozen of them (less one or two that I let my husband try).
Since herbs aren’t exactly in season right now, I skipped over the fresh rosemary… but I think I will include that if I make these for an appetizer in the spring.
When I recreated them, I paired it with a creamy sriracha sauce to kick up the flavor a notch. These would be perfect to serve at a Superbowl party, or even a church function. They’re not too complicated to make or expensive to prepare, and are sure to be a party favorite!
Bacon Wrapped Potatoes with a Sriracha Dipping Sauce
Makes 24 bites
- 3 medium potatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 tsp ground pepper
- 1 package bacon
- toothpicks
- 1 cup sour cream
- 2 – 4 tbsp sriracha
Preheat oven to 400 degrees and bring a large pot of water to a boil. Peel the potatoes, and cut into small, bite-sized pieces. Boil the potatoes for 3 – 5 minutes, just until fork tender. You want them to be almost cooked all the way through, but not falling apart.
Drain the potatoes, and toss with olive oil, salt and pepper. Allow to cool enough to handle.
Cut the bacon strips into thirds, and wrap each potato bite with a piece of bacon, and secure it with a toothpick. Lay out bacon wrapped potatoes on a baking sheet, and bake in preheated oven for 15 – 20 minutes, or until the bacon is cooked through and crispy.
In a separate bowl, combine sour cream, sriracha, and season with salt and pepper to taste.
Serve bacon wrapped potatoes along side sriracha dipping sauce, and dig in!

Ingredients
