There are times when I feel like I have absolutely no energy at all. My guess if that you’ve probably felt the same way at some point or another. And these delicious cranberry pecan energy bites are exactly what you need for that extra boost of energy. They’re healthy, sweet, indulgent, and they taste amazing—making them the perfect snack anytime.
The best part about these energy bites is that they take hardly any time to make at all and require very little preparation. Convenience is key when it comes to snacking. Being able to just pop an energy bite in your mouth before working out or going to pick up the kids is a convenience many of us need
The wonderful flavors of cranberry, pecans, peanut butter, and chocolate come together in these delicious energy bites. It’s so great to be able to make a snack in minutes that’s actually healthy! And kids love them. My house is picky eater central and most of them don’t like trying out new things, but after trying one of these energy bites, it quickly became a family favorite. And good thing because I’ve always got a large supply of the ingredients needed for the recipe.
For a vegan option to this recipe, simply swap maple syrup for the honey. As far as the nuts go, you can use pecans, walnuts, almonds, or you can even leave them out if someone in your home has a tree nut allergy. The peanut butter can also be swapped for almond butter or sunbutter if necessary.

Cranberry Pecan Energy Bites
Yield: about 2 dozen
Ingredients:
- 2/3 cup creamy peanut butter
- 1/3 cup pure honey
- 1 1/2 teaspoons pure vanilla extract
- 1 cup old-fashioned oats
- 1 cup unsweetened shredded coconut
- 1 to 2 tablespoons cocoa powder
- 1/2 cup finely chopped pecans (or nut of choice)
- 1/2 cup dried cranberries (I also added a little bit of dried blueberries)
- 2 teaspoons chia seeds, optional
Instructions:
Line a baking sheet with foil, parchment paper, or a silpat.
In a medium bowl, mix together the peanut butter, honey, and vanilla extract. Stir until combined.
Add in the oats, shredded coconut, cocoa powder, pecans, cranberries, and chia seeds (if using). Stir until it becomes too hard to use a spoon. Mix with your hands until a cohesive mass forms.
Scoop the mixture and roll into 1 (or 2) inch balls. Place rolled energy bites onto your prepared pan and place pan in your refrigerator until ready to eat. They will stay fresh for about 10 days in an airtight container in the fridge.
