Easy No Bake Cookie Recipe
I have been having so much fun cooking with Elle, lately. She’s only 3, but she loves helping me measure out ingredients, stir mixes and watch me cook. She is especially interested when I am baking sweet goods, for some reason 😉
I wanted to come up with a recipe that Elle could help me with, that didn’t require me to spend an hour in the kitchen. After a little brainstorming, I decided on an easy no bake cookie recipe!
If you can believe it, this recipe only takes 5 minutes! Yep– in 5 short minutes, you can have these tasty, chocolaty, peanut-buttery cookies. That is definitely faster than driving to the store to buy packaged cookies, and it is certainly healthier, since they don’t have any sugar, preservatives, or food dyes.
Easy No Bake Cookie Recipe
Yields 36 cookies
- 1/2 cup butter
- 1/4 cup honey
- 1/4 cup unsweetened cocoa powder
- 1/2 cup whole milk
- 3 cups old-fashioned oats
- 1/2 cup organic peanut butter
- 1 tsp vanilla extract
Combine butter, honey, cocoa powder and milk in a small saucepan over medium heat. Warm until all ingredients have melted, stirring frequently. Remove from heat, add in oats, peanut butter and vanilla extract.
Using a spoon, drop tablespoon sized cookies onto parchment or wax paper and allow to cool and set.
The hardest part of the process is waiting 20 minutes for them to cool. Especially if you’re an eager sweet-toothed toddler, who wants to reap the rewards of her labor. If you really don’t want or can’t wait 20 minutes, you can pop ’em in the freezer for about 5-10 minutes, and they will be ready!
If you’re still in the mood to bake, after those 5 minutes of hard work, here are some other ideas for you!

No-bake cookies are a favorite of mine. I tell myself it’s okay to make them all the time, because nursing moms like me need oatmeal. 😉 my recipe is similar to yours. But with no milk. And sometimes I use coconut oil instead of butter.
