Homemade Strawberry Cake Recipe
Do you ever pick up a pint of fresh strawberries at the market and inhale the wonderfully fresh and sweet fragrance of the strawberries? If you don’t, try it the next time you’re at the store. It’s an uplifting experience. No artificial fragrance can beat nature!
My latest excursion to the market inspired me to bring home a pint of the oh-so-yummy strawberries, and while Elle was begging to make cupcakes, I decided to incorporate fresh, ripe strawberries into a homemade strawberry cake recipe and top it with some fresh, homemade whipped cream.
In case you feel as inspired to make this light, fluffy and moist cake that embodies the spirit of summer, here is my homemade strawberry cake recipe.
Homemade Strawberry Cake Recipe
- 2 cups unbleached flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/3 cups milk
- 1 tbsp vinegar
- 1/2 cup butter, at room temperature
- 1.5 cups organic sugar cane
- 2 eggs
- 1 tsp vanilla extract
- 2 cups fresh strawberries, stems removed and sliced
Preheat oven to 350 degrees. Lightly grease a 13×9 pan and set aside.
Combine flour, baking soda, baking powder and salt in a medium sized bowl.
In a small bowl, combine milk and vinegar, and let sit for 5 minutes. until milk starts to curdle.
In a large bowl, cream together butter and sugar until mixture is creamy and light. Add in eggs, one at a time, mixing well after each addition. Add in vanilla extract, followed by milk mixture. Slowly mix in dry ingredients and mix until fully incorporated. Gently fold in strawberry slices.
Pour cake mix into pan and bake in preheated oven for 30-35 minutes. Remove from oven and allow to cool.
Top with whipped cream and sliced strawberries and enjoy!

Hi, it’s 6am now, and I’ve been up since 3am….on Pintrest. I think the first pin if yours that I saw was the lavender lotion, which I fully intend to try, seeing as my almost-2-year-old daughter is completely obsessed with lotion and is usually really wound up. That should cover 3 out of my million things to accomplish: let her lotion up (yes, she does it herself), simmer her down a notch, and use natural/homemade products.
I’m currently planning her birthday party which will be in December, and since I’ve never really planned a party myself, I’m starting way early. I’ve already ordered stuff online for her My Little Pony themed celebration! I really love this idea and only hope I can find good strawberries in December. I might try peaches or even apples. However, I was wondering why you would use vinegar and curddle the milk? I’m not all that in the kitchen, and much less would I understand the reasoning for it, but I’m sure there’s a good one.
I want to try a few cakes to find the right one and I think this one might win. I’m looking through your other recipes and I found you basic white recipe as well. I’m thinking of using coconut extract instead of vanilla. I accidentally used coconut in some pancakes and they were abusable. Yes….as in, 5 every day for a month.
I was wondering about using coconut flour in cakes, too. Have you ever tried that?

Thanks for stopping by! I mix the milk with vinegar, because it essentially makes a buttermilk, which adds some extra flavor to the cake. I think coconut extract is a great idea – be sure to let me know how it turns out!
