Honey Roasted Peanut Butter Recipe
Like most people, the thought of learning how to make peanut butter never even crossed my mind. Peanut butter is bought at the store, pre-made in a glass jar, either chunky or creamy.
Well, thanks to Pinterest, I now know that doesn’t have to be the end of the story. I can actually make my own peanut butter! What’s even better than that is how simple it is to make it from scratch. Only 2 ingredients, about 10 minutes, and viola – homemade peanut butter! The best part is that the peanut butter can be customized if it’s homemade. You can add cinnamon and raisins to it for an interesting variation, or melt in chocolate chips or cocoa powder to make it, albeit less healthy, but probably even tastier. I opted to add in a little honey to sweeten it up, and because I was feeling nostalgic this weekend.
My brother, sister and I used to fly to Florida every summer to visit our dad. On the plane ride, we were given little packets of honey roasted peanuts, and we absolutely loved them. It almost took away the fear of flying. Almost. I decided to try and capture that flavor, so I created a honey roasted peanut butter recipe.
Honey Roasted Peanut Butter Recipe
- 2 cups roasted peanuts
- 1/4 cup local raw honey
- A little bit of peanut oil (optional)
Preheat oven to 350 degrees. Place a piece of parchment paper on a large cookie sheet. Remove the shells, if necessary. Warm up honey in a saucepan over low heat until it starts getting easier to stir. Add in peanuts, turn the heat off, and pour honey coated peanuts onto the cookie sheet. Bake for 5 minutes, if the peanuts are already roasted, and 15 – 20 minutes if the peanuts are raw. Keep an eye on them, because they go from perfect to burnt in under 60 seconds.
Transfer cooled peanuts into a food processor, and process for 3-5 minutes, or until smooth. If the mixture is too dry, you can drizzle in a tsp of oil at a time, until desired consistency. Store in a clean container and refrigerate. It should keep for 3 – 4 weeks.
