My daughter starts 4th grade next week and I’m amazed at how quickly summer has flown by! I am even more amazed at how busy our schedules have gotten, now that school is starting again.
I’ve been using my lunch breaks at work to shop for school supplies, and run all of the other errands that need to be run this time of year.
Needless to say, I am pretty exhausted by the time I get home in the evenings! And while I love home-cooked meals, I don’t have the energy or time to spend more than 30 minutes making dinner.
One of the hacks I’ve learned over the years to prepare a delicious dinner without spending a lot of time on it is using Smithfield® products. The have 100% fresh pork cuts, marinated with all natural ingredients. I have tried at least 5 different flavors and my family has loved them all. They provide real flavorful, hassle-free solutions to dinner time.

On the menu for this week is one of my favorite 30-minute meals I’ve made with Smithfield Garlic & Herb Loin Filet – Pork Loin Sliders with Caramelized Onions and Garlic Aioli.
I know that sounds like a lot! But it’s really just delicious sliders made with:

- Slider Buns
- Smithfield Garlic & Herb Loin Filet
- Caramelized Onions
- A super easy & quick Garlic Aioli
I use an Instant Pot in this recipe, to expedite the cooking time and minimize the amount of dishes we have to wash!

Instant Pot Pork Loin Sliders
To start these delicious Instant Pot Pork Loin Sliders, you’ll chop an onion into thin slices.
Next, turn on your Instant Pot and add 2 tablespoons of olive oil, then turn on to saute. When the oil is warm, add onions, season liberally with salt, and Sauté until starting to brown. Remove onions and set aside.
Cut Smithfield Garlic & Herb Loin Filet into 1″ medallions. Sauté in the leftover oil, in batches, if necessary, until the sides are browned. Turn off Sauté setting.

Return all pork to the Instant Pot, lock lid and set to Pressure Cook on high for 8 minutes. Allow pressure to naturally release for 5 minutes, then you can let out the remaining pressure with the quick-release function.
While the pork is cooking, combine 3/4 cup mayonnaise, 3 cloves minced garlic and 2 tablespoons lemon juice. Season with salt and pepper to taste.
Toast the slider buns, if preferred.

Once the Smithfield Garlic & Herb Loin Filet is cooked, it’s time to assemble the sliders!

Smear the aioli onto each side of a slider, add one pork medallion, then top with caramelized onions. Repeat for remaining sliders.


Instant Pot Pork Loin Sliders
Quick and easy Instant Pot Pork Loin Sliders made with garlic aioli and topped with caramelized onions.
Ingredients
- 1 Onion sliced into thin strips
- 2 tbsp Olive Oil
- 2 lbs Smithfield Garlic & Herb Loin Filet
- 3/4 cup Mayonnaise
- 3 cloves Garlic minced
- 2 tbsp Lemon Juice
- Salt & Pepper
- 12 Slider Buns
Instructions

Add 2 tbsp of olive oil to the Instant Pot and set to Sauté mode. Once warm, add onions, season liberally with salt, and sauté, stirring frequently, until onions are browning. Remove and set aside.

Cut Smithfield Garlic & Herb Loin Filet into 1" medallions. Using leftover oil, brown medallions on both sides, about 1 minute. Work in batches, if necessary. Turn off Sauté function.
