When I first started a keto diet, I found it to be quite restrictive. I really missed my bread and pasta and IPAs. But after a couple weeks, my cravings for carbs significantly reduced, and it became even easy to say no to non-keto foods.
One of the things that helped me overcome those first few weeks was making sure I had variety in my snacks. I know some people can eat the same food everyday and be totally okay with it, but that’s not me. I love cooking and trying new foods, and there is no reason to limit food variety just because you’re on a keto diet.

These keto fried pickles are a great way to add some low carb flavor into snacks. They’re salty, they’re sour, and they’re deliciously crunchy.

Keto Fried Pickles
For this recipe you’ll need:
- 40 Dill pickle round slices
- 1/2 cup almond flour
- 1 cup pork rinds, crushed into crumbs
- 1 egg
- 1/2 tsp Cajun seasoning
- Salt and pepper to taste
Start by preheating your air fryer to 350 degrees.
Place the almond flour in a shallow bowl or plate. Add Cajun seasoning, salt and pepper, then stir to combine.

Beat the egg in a small bowl.
Add crushed pork rind crumbs into a shallow bowl or plate.

Dip the pickles in the almond flour mixture, then dip in the egg, then dredge in pork rinds.

Place breaded pickle chips into the air fryer and cook 10 – 15 minutes until lightly brown and crispy.
