I am a believer that any kind of food can be modified to make it low carb, and pepperoni pizza is no exception.
A couple friends of mine recently had a get together, and several of us are on a keto diet, so I figured it was the perfect opportunity to make some low carb snacks.

Keto Pepperoni Pizza Bites
These keto-friendly pepperoni pizza appetizers are made with crispy pepperonis, pizza sauce, melted mozzarella, and topped with a sprinkle of basil (optional).
Start by preheating the oven to 400 degrees.
Cut each pepperoni about half way up the top, bottom, left, and right side – in the pattern of a cross.
Place the pepperonis in a mini muffin pan, allowing the cut sides to overlap and create a cup.
Place the pepperonis in a preheated oven for 5 minutes, until crispy.
Remove the pepperonis from the pan and use a paper towel to absorb the residual grease from the muffin pans.
Return the pepperonis to the pan.
Next, you’ll spoon half a teaspoon of pizza sauce into each cup. Then place a small cube of mozzarella cheese on top of the sauce.
These go back into the oven for 2 – 5 minutes, until the cheese has melted.
Remove pepperonis from the pan, transfer to a plate, then garnish with diced fresh basil (optional).

- 1/4 cup pizza sauce

Can you Make These Ahead of Time?
Yep! Make these ahead of time, then store them in the refrigerator until ready to use. You can warm them up in the oven or microwave.
These will keep in the refrigerator for up to one week.

GoodMorning, quick question to anybody that may have made these. Do they get really really greasy? If so do you think if you wold make the shells ahead of time and pat out the excess oil with paper towels? Then when your ready to serve continue with the rest of recipe and bake off to melt cheese? Thank You.

Cheryl – great question! Yes, these can get greasy and using a paper towel to get rid of the grease in the pepperonis is a great way to cut down on the excess grease.

Husband approved. I used uncured bacon from Costco instead of pepperoni and it came out fine and it’s the perfect shape for the 24 muffin pan holder. Made my own sauce with lemon pepper, celery salt, garlic onion seasoning and olive juice. I can take these on my mini-vacation for when I want a snack or onto the beach with my keto vodka drink. Yay. I tried regular pepperoni slices and they were way too small and filled the mini muffin pan sections less than half full- not at all like your photo. I am going on a pepperoni hunt to try to find larger ones because the little tiny ones were yummy!

HI, What Pizza Sauce are you using in your Keto Pepperoni Pizza Bites. The lowest carb count I have found is Rao’s at 4 net carbs for a half cup. Also, these say 1 carb is that for 1? Thanks for any tips on sauce!

This recipe is for 6 servings (4 bites per serving) so 4 bites = 1 net carb, or 0 net carbs per bite!
The pizza sauce I used was Trader Joe’s Pizza Sauce, which is 4 net carbs for 1/4 cup. Since 1/4 cup is all that is needed for 24 bites, it’s about .16 carbs per bite — which isn’t much! It sounds like you found a sauce that is half of those carbs though, so that would make it even less if you used it.

Hi I’m Jackie and I’m new .They have my carb count at 34 a day so that would mean I can’t eat anything the whole day .Im finding this in everything I go to eat so I stay at the same thing everyday.2 eggs in the morn ,salad at lunch and meat at night .I need to know what I need to do as it is I come right on the money with the carbs but getting really old after 3 weeks
