When I first heard about roasted Parmesan brussels sprouts, I didn’t think they would be anything I would be interested in. I never really was one to love brussels sprouts. But all it took was one bite to convince me that I had been missing out on something big my entire life.
Heirloom Brussels Sprouts Seeds
These Roasted Parmesan Brussels Sprouts are incredible easy to make and use only 4 simple ingredients: brussel sprouts, olive oil, Parmesan cheese, and salt. They’re a super healthy snack or side dish and the best part…kids LOVE THEM! It’s true! I never thought I’d say that there was dish involving brussels sprouts that they would love, but they really do love them.
There is certainly no lack of flavor in these. I have to remind myself not to overload my plate with them at dinner time. And then I have to remind everyone else not to overload their plates. Seriously, these babies are for sure a crowd pleaser. Even my pickiest of eaters loved them.
I use olive oil for this recipe, but you could alternatively use any other type of oil that you’d like. I’ve also made these without the Parmesan before, and of course they’ll just be Roasted Brussels Sprouts, but they’ll be vegan-friendly!

Roasted Parmesan Brussels Sprouts
Ingredients:
- 1 pound brussels sprouts
- 2 tablespoons olive oil
- 1/2 cup Parmesan cheese
- salt & pepper, to taste
Preheat oven to 400 degrees. Cut bottoms & loose leaves off of Brussels sprouts. At this point you can halve or quarter the brussels sprouts if you want.
Place the brussels sprouts in large Ziploc bag. Pour in the olive oil. Close the bag (make sure it’s sealed) and shake well until brussels sprouts are coated.
Spread out the brussels sprouts on baking sheet lined with foil or a silicone baking mat. Sprinkle with Parmesan cheese, salt & pepper. Roast for 20-24 minutes, stirring once. Let cool for 5 minutes and serve.

Do you put the parmesan on them when they go in the oven, or when you take them out? I didn’t see that part in the directions. Thanks!

I would add parmesan about 5 minutes before they’re ready to take out of the oven. Hope you enjoy!
