A few weeks ago, I posted a recipe for Korean BBQ Tacos, after I watched an episode of Food Network’s Diner Drive-ins and Dives. I think it was in the same episode where Guy pops into a food truck and they demoed a recipe for steak tacos with chimichurri sauce. It looked amazing!
I have made chimichurri sauce before, and it is such a punchy and bright sauce. It packs a ton of flavor into a little amount. It is also made with fresh ingredients like cilantro, garlic and olive oil, and it pulls together in a zip. Plus, it comes out to be the most vibrant, beautiful hue of green.
I recently acquired a cast iron skillet, and have been using it at every opportunity. I know that steaks are traditionally cooked on the grill, but if you haven’t tried cooking one in a cast iron skillet, it is definitely worth a try. It creates a nice golden brown crust on the outside and gives it tremendous flavor, while still keeping the steak juicy.
I paired my homemade chimichurri sauce with a cast iron skillet sirloin steak, and put them into some lightly fried corn tortillas, threw in some cherry tomatoes and a little sour cream on top, and it was amazing. It had tons of well-balanced flavor with the bold chimichurri sauce, the salty and juicy steak, and the sour cream cut through with a cool note. Perfection.

Steak Tacos with Chimichurri Sauce
- 1 pound sirloin steak
- 1 tbsp olive oil
- salt and pepper to taste
- 8 corn tortillas
- chimichurri sauce (recipe below)
- cherry tomatoes, quartered
- sour cream
Add olive oil to a pan or cast iron skillet and warm over medium-high heat. Salt and pepper both sides of the steak. Once the pan is warm, add steak, and sear to get a good crust (3 – 5 minutes), flip and sear the other side. Continue cooking until desired doneness, then remove from heat and allow to rest for 5 minutes. Cut into thin strips.
In the same pan, add a little more olive oil, and lightly fry the corn tortillas, cooking around 30 seconds a side. You want them to get warm and pliable, but not cook them so long it gets crunchy.
To assemble: pile steak onto warm tortilla, and top it with a drizzle of chimichurri sauce, some cherry tomatoes and a spoonful of sour cream. Throw some chimichurri sauce into a cup on the side for dipping!

Steak Tacos with Chimichurri Sauce
Ingredients
Chimichurri Sauce
- 1 large bunch of cilantro leaves
- 4 cloves of garlicÂ
- 1 jalapeno stem and seeds removed (optional)
- 1/4 cup red or white wine vinegarÂ
- salt and pepper to tasteÂ
- 2/3 cup olive oilÂ
Tacos
- 1 pound sirloin steak
- 1 tbsp olive oil
- salt and pepper to taste
- 12 corn tortillas
- chimichurri sauce recipe below
- cherry tomatoes quartered
- sour cream

This looks scrumptious. I fear I’d be the only one who would enjoy it in my home, but I’d love to try it that’s for sure. I love spicy food. Then you had to add in perfectly made steak to the mix too.
