I have been meaning to share this recipe for tomato basil salad dressing for a while now! I first made this recipe over the summer, when I purchased a ton of ripe organic tomatoes from Bountiful Baskets. My mom was in town, taking care of my son while I was at work (aren’t moms the best?!), and while he was napping, she managed to peel, roast and puree the tomatoes.
We put up several quarts of tomato sauce in the process, and I used a little of the extra tomato sauce to make a yummy tomato basil salad dressing! I still have a couple quarts of tomato sauce frozen that I have been adding to soups and sauces, but this weekend I decided to grab a quart and use it to make this tomato basil salad dressing!
If you don’t happen to have quarts of frozen tomato sauce , you can definitely make this with jarred tomato juice, if you find yourself in the middle of November and are craving tomato basil salad dressing.
I also have a post sharing 19 clean eating salad dressings, if you are looking for other types of homemade salad dressings. I have discovered that it is hard to go back to the pre-made dressings after you start making your own! There is so much variety and flavor you can create when you make your salad dressings from scratch. Most of them only take a couple minutes to prepare, and will last a good week or two in the fridge (if you don’t devour it before then!).
If you want some variety to your every day garden salad, check out this recipe for a 10-minute tomato basil made with big chunks of ripe tomatoes and fresh basil. Yum!
