White Pizza with Spinach and Bacon
I can honestly say I don’t miss the highly processed pizzas that you get from the freezer aisle or order from your local pizza joint. Because homemade pizza is 100 times tastier, healthier, and more affordable.
This white pizza with spinach and bacon is a nice break from the traditional pepperoni and cheese. And because there’s no tomato sauce, even picky eaters will love it! Instead of spreading pizza sauce on the crust, I spread a generous amount of ricotta cheese, which takes this pizza to an entirely new level.
Not to mention how wonderfully this pizza freezes! Once it’s cooled, wrap it in plastic wrap and freeze to pull out whenever you need a quick meal. When I prep meals for the month, this pizza is always something I make because the ingredients are cheap and all I have to do is spread, sprinkle, and bake. You could even flash freeze it before you cook it, so it’s the equivalent of a frozen pizza from the store, only better.
The first time I made this white pizza, I wasn’t sure how it would turn out. I mean, I’ve never made a pizza without pizza sauce on it. The thought of a pizza without it befuddled me. But because ricotta has such a dynamic taste, it easily enhances the flavor of any dish you put it in. I also didn’t know how it would turn out because I used pizza dough that I unfroze the day before (which was probably months old). Luckily, frozen pizza dough lasts a long while in the freezer (4-6 months), so you can make a large batch, freeze it, and thaw it whenever you want pizza dough but don’t want to go through the effort of making it.
What I think you’ll like most about this pizza is that it is INCREDIBLY easy to make, especially if you’ve already got pizza dough in the refrigerator. All you have to do is roll out the dough, spread on the ricotta, sprinkle on the mozzarella, spinach, and bacon, and pop in the oven! And clean-up is a breeze!
White Pizza with Spinach and Bacon
Makes 1 regular-sized pizza
Ingredients:
- 1 (1 lb.) ball pizza dough
- 4 large strips bacon, cooked and chopped
- 1/4 cup ricotta cheese
- 1 1/2 cups mozzarella cheese
- a large handful of fresh baby spinach
- pepper, for sprinkling
- cornmeal, for sprinkling
Instructions:
- Preheat oven to 375 degrees F.
- Brush a pizza pan with olive oil and sprinkle on cornmeal. Roll the pizza dough out onto the pan.
- Spread the ricotta cheese on top of the rolled pizza crust, leaving a 1-inch margin. Sprinkle on the mozzarella cheese, spinach, and bacon. Grind a little bit of pepper over the top of the pizza and place the pizza in the oven.
- Bake for 25-30 minutes, or until the crust is golden brown and the cheese is starting to brown. Slice into 8 wedges and serve.

Wow, this looks so good. I have to admit that I am not big on tomato sauce on my pizza. It is one of the reasons I steer clear of being a pizza. I have never thought of adding ricotta – such a great idea. I will be trying this recipe this weekend.
