  • 4 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 lbs pork tenderloin cut into cubes
  • 2 tsp salt
  • 1 tsp ground oregano
  • 1 tsp ground cumin
  • 3.5 cups red chile sauce
  • 2 cups chicken broth
  • 24 oz can hominy drained


  1. Heat olive oil in a large pot over medium-high heat.  Add in onions and cook until translucent, about 5 minutes.  Add in garlic and cook an additional 30 seconds. 
  2. Add cubed pork tenderloin, then season with salt, oregano, and cumin.  Brown the sides of the pork. 

  3. Add red chile sauce, chicken broth, and hominy and mix well.  Reduce to medium and simmer for 30 minutes, or until pork is cooked through and tender.
