A quick and easy recipe for homemade calabacitas with squash, peppers, corn, and tomatoes

Ingredients

  • 2 tbsp olive oil
  • 2 jalapenos diced
  • 1 shallot diced
  • 1 zucchini diced
  • 1 yellow squash diced
  • salt and pepper to taste
  • 2 roma tomatoes diced
  • 1 cup corn

Instructions

  1. Warm olive oil over medium in a large pan. Add jalapenos and shallot, and cook until starting to soften - about 5 minutes.

  2. Add zucchini and squash. Season with salt and pepper, and stir. Cover with a lid and cook 5 minutes, until squash is starting to soften.

  3. Add tomatoes and corn, and continue cooking for another 3-5 minutes or until warmed through. Serve immediately.
