  1. Roughly chop vegetables. Add veggies, water, and spices to a stockpot and bring to a boil. Cover half-way with lid and reduce heat to medium.
  2. Simmer for 1 or more hours, until broth has reduced by half. Add more water if necessary.
  3. Strain broth from vegetables and return broth to pot.
  4. Heat broth to medium and add sliced mushrooms and diced green onions and simmer 10 more minutes.
