Instant Pot Pork Loin Sliders

  1. Add 2 tbsp of olive oil to the Instant Pot and set to Sauté mode. Once warm, add onions, season liberally with salt, and sauté, stirring frequently, until onions are browning. Remove and set aside.

  2. Cut Smithfield Garlic & Herb Loin Filet into 1" medallions. Using leftover oil, brown medallions on both sides, about 1 minute. Work in batches, if necessary. Turn off Sauté function.

  3. Return all pork to the Instant Pot, lock lid and set to Pressure Cook on high for 8 minutes. Allow pressure to naturally release for 5 minutes, then you can let out the remaining pressure with the quick-release function.

  4. While the pork is cooking, combine 3/4 cup mayonnaise, 3 cloves minced garlic and 2 tablespoons lemon juice. Season with salt and pepper to taste.

  5. Toast the slider buns, if preferred.

  6. Smear the aioli onto each side of a slider, add one pork medallion, then top with caramelized onions. Repeat for remaining sliders.
