A 30-minute New Mexican style green chile chicken pizza.
Preheat oven to 425°F.
Combine 1 cup flour, undissolved yeast, sugar, and salt into a bowl. Add water and oil, and mix well until blended - about 1 minute.
Slowly add in flour, mixing after each addition, until a soft dough forms. Dough should be slightly sticky. Place dough on a floured surface and knead until smooth and elastic, about 4 minutes.
Let dough rest for 10 minutes.
Roll out dough on a floured surface into a 12" circle. Place on greased pizza pan or baking sheet. Form a rim by pinching the edge of the dough.
Spread on pizza sauce, then sprinkle on mozzarella, then parmesan cheese. Top with chicken and green chile.
Bake on the lowest oven rack for 12 - 15 minutes, until cheese bubbles and crust is brown.
