Bacon-Wrapped Apricots & Jalapenos

18-21 apricots One package of bacon 5 - 6 jalapenos 1/4 cup pure maple syrup

Ingredients

  • 18-21 apricots
  • One package of bacon
  • 5 - 6 jalapenos
  • 1/4 cup pure maple syrup

Instructions

  1. Preheat oven to 375 degrees.
  2. Peel the apricots, and cut the flesh away from the seeds in 3 pieces.
  3. Cut the bacon pieces in half, so you have 32 pieces.
  4. Remove the stems and seeds from the jalapenos, cut in half vertically, and then cut each piece into thirds. You should have 6 strips from each jalapeno.
  5. Wrap 2 pieces of apricots and a slice of jalapeno with a piece of bacon. Secure with a toothpick and lay on a baking sheet. Repeat until you have 32 appetizers.
  6. Bake in preheated oven for 25-30 minutes, or until bacon is cooked and crisp.
  7. A few minutes before the bacon wrapped apricots are cooked, warm maple syrup in a small saucepan, over medium heat. Once bacon wrapped apricots are finished, brush with warm maple syrup.
