Preheat oven to 400 degrees and bring a large pot of water to a boil. Peel the potatoes, and cut into small, bite-sized pieces. Boil the potatoes for 3 - 5 minutes, just until fork tender. You want them to be almost cooked all the way through, but not falling apart.

Drain the potatoes, and toss with olive oil, salt and pepper. Allow to cool enough to handle.

Cut the bacon strips into thirds, and wrap each potato bite with a piece of bacon, and secure it with a toothpick. Lay out bacon wrapped potatoes on a baking sheet, and bake in preheated oven for 15 - 20 minutes, or until the bacon is cooked through and crispy.

In a separate bowl, combine sour cream, sriracha, and season with salt and pepper to taste.

Serve bacon wrapped potatoes along side sriracha dipping sauce, and dig in!
