Carne Adovada Papas

  • 2 cups of pork tenderloin cooked and cubed
  • 2 cups of red chile sauce
  • 2 tbsp butter
  • 4 eggs
  • 4 cups of hash browns cooked
  • 2 cups monterey jack and cheddar cheese shredded


  1. Simmer the pork in the red chile sauce in a pot over medium heat, until heated through.
  2. In a skillet, add butter, and fry eggs until desired doneness.
  3. Pile a cup of cooked hash browns into a bowl, top with 1/2 cup of the red chile pork mixture, then one of the cooked eggs, followed by 1/2 cup shredded cheese. If these are placed in an oven-proof bowl, you can broil it for a few minutes to melt the cheese.
