Clean Eating French Onion Soup {to Warm your Soul}

  • 1/2 cup butter
  • 4 onions sliced
  • 2 bay leaves
  • 3 cloves garlic minced
  • 2 fresh thyme sprigs
  • 1 cup red wine
  • 3 tbsp organic whole wheat flour
  • 8 cups beef broth
  • salt and pepper to taste
  • 1 cup Gruyere cheese grated


  1. In a large pan over medium heat, melt butter. Add in onions and bay leaves and saute until soft and caramelized, about 30 minutes. Add in garlic, thyme and wine, bring to a boil, then reduce heat to low and simmer until wine evaporates.
  2. Discard bay leaves and thyme, then sprinkle organic whole wheat flour on top. Cook on low for 10 minutes, then slowly add in beef broth. Bring to a simmer, season with salt and pepper, and cook an additional 10 minutes.
  3. Ladle into bowls and top with 1/4 cup Gruyere cheese. Enjoy!
