Grilled Pork Loin Salad

A quick and easy salad made with grilled pork loin medallions, feta cheese, and a simple homemade salad dressing

  1. Preheat gas or charcoal grill to 375 - 400℉.



  2. Grill pork filet on indirect heat for 45 – 55 minutes per pound, turning occasionally.

    To speed up this recipe, you can slice the pork loin into 1" thick medallions and cook them for 20 minutes.

  3. Meanwhile, divide mixed greens between 4 bowls.




  4. In a mason jar or small bowl, whisk together 6 tablespoons olive oil and 2 tablespoons balsamic vinegar. Sprinkle in salt and pepper, to taste.

  5. Once pork loin is cooked, let it rest for 5 minutes. Cut into medallions and divide between the bowls. Sprinkle on feta cheese. Pour on salad dressing.
