I admit, I never liked mushrooms, until recently. But I’m convinced, if I had mushrooms prepared like this the first time, I would have loved them for my whole life.
I’m a changed woman.
Alright, enough already, here’s the recipe!
- 2 tbsp butter
- 1 tbsp olive oil
- ½ large onion, chopped
- 2 garlic cloves, chopped
- 1 lb mushrooms, sliced
- 1 cup chicken stock
- 1 tsp worcestershire
- ½ tsp salt
- ¼ tsp pepper
- 1 tsp (or a good squeeze) fresh lemon juice
- Add butter and olive oil to a pan on medium heat until butter is melted.
- Add onions and sautée until almost translucent, about 4-6 minutes. Add garlic, and sautée an additional 1-2 minutes until fragrant.
- Add mushrooms and sautee for 3-5 minutes. Add chicken stock, worcestershire, salt, pepper, and lemon juice. Cook until mushrooms are tender, about 20-25 minutes.
