  • 1 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 1/2 tsp paprika
  • 3 cloves garlic minced
  • 1 cup fresh mushrooms sliced
  • 1/2 cup fresh tomatoes diced
  • 1 1/3 cup half and half
  • 1 1/3 cup parmesan cheese freshly grated
  • 1 lb whole grain pasta


  1. Add olive oil to a large pan over medium heat.

  2. Season both sides of chicken breasts with salt, pepper and paprika. Add to the pan and sauté until cooked through and no longer pink in the middle. Remove from pan, slice into bite-sized pieces and set aside on a plate.

  3. Bring a pot of water to a boil and add whole grain pasta. Cook according to package directions and drain.

  4. In the same pan, over medium heat, add garlic, mushrooms and tomatoes. Sauté until the tomatoes are softening and mushrooms are slightly browning, then add chicken to the pan. Pour in half and half and bring to a boil. Add in parmesan cheese, and remove from heat. Stir well until cheese is melted and sauce is thickened.

  5. Serve chicken and mushroom sauce over pasta.
