Ever since Pi Day (3/14), I have had an enormous craving for pie! I have started implementing a weekly bake day for my 6-year-old daughter and me, because I want to teach her how to cook (and bake!) using real ingredients. Since I was craving pie, and she loves strawberries, I decided we would make a clean eating strawberry pie for our baked good of the week!
Making Homemade Pie Crusts
I will admit that when I first started cooking outside of the box, I was really apprehensive about baking pies. I started out using pre-made pie crusts and making semi-homemade fillings. Once I got more experience baking, I started making my fillings completely from scratch. Then I tackled homemade crusts, which are really not hard! I was surprised at how easy a delicious homemade, buttery pie crust is to make. With only 4 ingredients and a little time, you can create the perfect pie crust from scratch.
But back to the strawberry pie… I wanted to add minimal sugar, because my kids are hyper enough from the natural sugars that come from fruit! I focused on bringing out the natural sweetness of the strawberries for this clean eating strawberry pie.
That Strawberry Filling
For that strawberry filling, I simmered fresh strawberries with a bit of honey, arrowroot powder and water, then blended the strawberry mix with full-fat Greek yogurt.

Why full-fat Greek yogurt?
I know there is a trend to follow a low-fat diet for a healthier life style, but I don’t buy into it. I believe that whole fat dairy products are less processed. And they’re better for you. And research showed that “people who had higher levels of three different byproducts of full-fat dairy had, on average, a 46% lower risk of getting diabetes”. Also, people who consume full-fat dairy products lowered their risk of being overweight or obese by 8%. (source) Aaaand, it tastes better!
Then there was Whipped Cream
And by whipped cream, I do not mean that pressured can of artificial flavor and nonfat milk that is filled with preservatives. Real whipped cream is made from heavy cream that is whipped. Real whipped cream takes 2 ingredients and less than one minute to make, and it’s freaking delicious.
I hope I have given you a few reasons why eating clean eating strawberry pie is far better than eating a pre-packaged strawberry pie. I also hope that we can agree that everyone should try this clean eating strawberry pie.
Because life deserves strawberry pie.
Alright, here’s the recipe!
Clean Eating Strawberry Pie
Ingredients
Pie Crust

1 1/4
cups
unbleached all-purpose flour

1/4

salt

Strawberry Filling

cups
strawberries
quartered with stems removed

1/4
cup
honey
-
1/2
cup
water

tbsp
arrowroot powder
or cornstarch

Greek yogurt
Whipped Cream

heavy cream

tsp
vanilla extract
Topping
-
2 - 3
strawberries
sliced
Instructions
Pie Crust
-
Combine flour, salt and butter in a food processor. Pulse until the mixture forms into pea-sized pieces. Slowly add in cold water, and pulse until dough comes together. Turn dough onto a floured surface and form into a ball. Wrap in plastic wrap and refrigerate 1 hour.

Preheat oven to 425 degrees. Remove dough from refrigerator, and place on floured surface. Use a rolling pin or sturdy glass to roll the dough into a 12-inch circle. Transfer dough into a 9-inch pie pan, folding any excess dough over. Prick the crust all over with a fork.

Place a sheet of foil on top of the raw pie crust, and fill with uncooked rice or dried beans in the center of the foil. Bake crust in the oven until crust firms, about 15 minutes. Remove the foil and rice or beans, and return to the oven. Bake an additional 5 - 7 minutes, until pale golden brown.
Strawberry Filling

Combine strawberries, honey, water and arrowroot powder in a saucepan over medium heat. Bring to a gentle boil, then reduce heat to medium, and simmer for 10 minutes, until the strawberries are soft. Remove from heat and allow to cool.

Add strawberry mixture and Greek yogurt to a blender, and mix until smooth.
Whipped Cream

In a medium bowl, combine heavy cream and vanilla extract. Use an electric mixer to whip the mixture for 30 seconds, or until the whipped cream starts to thicken.
Create the pie

Spoon the strawberry filling into the baked pie crust. Spoon on whipped cream, and even out with a spatula. Layer on sliced strawberries. Chill until serving.
