When I was younger, I often would visit my cousins on the weekends. I would get especially excited when I got to visit them on Friday nights, because my aunt would always make pizza from scratch on Fridays.
I recently heard that often the most prevalent memories we have from our childhood is having dinner with families. Maybe that’s why I often think about those visits whenever I have pizza?
In either case, I figured this would be a good tradition to start with my own children. So, we’ve started making homemade pizza on Fridays!
I also get my kids to help me make the pizza, since I strongly believe teaching kids to cook is a critical life skill they’ll keep with them the rest of their lives.
Baking pizza from scratch with my kids is a really fun activity! The baking and mixing – the kids love it and we get to practice counting and measuring skills in the process.
We are adventurous eaters (or, at least I’m trying to make my kids adventurous, lol), so we try different types of pizza every week. Since we live in New Mexico, green chile is often a favorite topping, and this week we paired it with tender chunks of chicken to make a delicious green chile chicken pizza.

How to Make Green Chile Chicken Pizza
I am a big believer that the most important element of a good homemade pizza is the pizza crust. If you’ve never made pizza crust from scratch, it may seem a little intimidating, but with the right ingredients and recipe, it is easy and fail proof.
The trick to making consistently great pizza crust in a short amount of time is to use Fleischmann’s® RapidRise® Yeast. They’ve been around for 150 years and when you cook homemade yeast recipes from scratch, you can really taste the quality of the bread.
The Ingredients:
Here’s what you need to make a green chile chicken pizza:
- 1 3/4 to 2 1/4 cups all-purpose flour
- 1 envelope Fleischmann’s® RapidRise® Yeast
- 1 1/2 tsp sugar
- 3/4 tsp salt
- 2/3 cup very warm water (120° to 130°F)
- 3 tbsp Mazola corn oil
- 1 cup pizza sauce
- 2 cups cooked chicken breasts, cut into 1/2″ cubes
- 1/2 cup diced green chile
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded parmesan cheese
The Instructions:
Start by preheating the oven to 425 °F.
Combine 1 cup flour, undissolved yeast, sugar, and salt into a bowl. Add water and oil, and mix well until blended – about 1 minute.
Note: Add water heated to 120˚F-130˚F and follow recipe instructions. Always use a thermometer to check temperature. If the water is too cold, the yeast won’t activate. If the water is too hot, it will kill the yeast. The right temp (not hot, not too cold) is the most important factor in successfully baking with yeast. Also, make sure the yeast isn’t expired, because if it is, it won’t rise.
Slowly add in flour, mixing after each addition, until a soft dough forms. Dough should be slightly sticky. Place dough on a floured surface and knead until smooth and elastic, about 4 minutes.
Let dough rest for 10 minutes.
Roll out dough on a floured surface into a 12″ circle. Place on greased pizza pan or baking sheet. Form a rim by pinching the edge of the dough.
Spread on pizza sauce, then sprinkle on mozzarella, then Parmesan cheese. Top with chicken and green chile.
Bake on the lowest oven rack for 12 – 15 minutes, until cheese bubbles and crust is brown.
Green Chile Chicken Pizza
A 30-minute New Mexican style green chile chicken pizza.
