Cheese Sauce for Broccoli
I recently inherited a lot of cookbooks. And by a lot, I mean 36 large bins, filled with cookbooks. There must have been over a thousand. It was my grandmother’s, aunts and father’s entire life collection. At first, I was a bit overwhelmed by the sheer volume of it, but once I got digging around in the bins, I became pretty excited.
There were definitely some vintage books in the collection. I have decided to pick some random recipes from the books, recreate them, and share them here! Today’s recipe comes from Farm Journal’s Country Cookbook:
Inside the front cover was a typed (via typewriter) note with another recipe on it. I love the personal touch!
There are a ton of great recipes in this cookbook, but when I see words like “bacon” and “cheese”, I tend to gravitate towards such words. I thought you guys might like it as well 😉 The original recipe requires cooking via a double boiler method. I’m going to change it up a bit to make it a little more simple, but I’ll post a picture of the original recipe, in case you would rather follow it instead.
Bacon Cheese Sauce for Broccoli
- 2 slices bacon, diced
- 2 tbsp flour
- 1 cup milk
- 1/4 tsp salt
- 3/4 cup grated cheese
Cook bacon until crisp. Remove bacon, leaving fat drippings in pan. Turn heat to medium and sprinkle in flour. Stir until flour has absorbed all the drippings, then slowly pour in milk, mixing constantly with a whisk. Keep whisking until you have a smooth roux. Add in salt.
Reduce heat to medium-low and add in cheese. Stir constantly until the cheese is melted and sauce is thickened. Add in bacon pieces and serve immediately.
This cheese sauce for broccoli is great on cauliflower or carrots, too! You could add in a little more milk and serve it with cooked elbow macaroni, if you wanted to go the carb route.
If you want to just pick up a spoon and go to town, I won’t judge. This bacon cheese sauce is delicious.

I hope you guys enjoy this recipe for bacon cheese sauce! It gets a little clumpy after it cools down, so I do encourage you to serve it immediately. My hubby got called out to work while I was cooking, so an hour later when he was dishing up his plate, he was less impressed than I was with the texture of the sauce. He still ate it, (it has bacon, after all), but just didn’t get the same satisfaction from it as I did.
