I started following a ketogenic diet about a month ago and have lost almost 9 pounds!
My motivation for losing weight is my upcoming wedding – in about 3 months. My goal was to lose 25 lbs in 4 months, and thanks to keto, I am well on my way!
I have been getting more creative in the kitchen, trying to satisfy cravings for certain carbs, and one of my largest cravings has been tortillas. As a New Mexican native, I eat a lot of tortillas.
This past week, I learned how to make keto quesadillas, filled with tender cuts of sirloin steak, chopped spinach, and creamy feta and cream cheese. They’re ridiculously tasty and come in at:
- 512 calories
- 9.8 net carbs
- 31.5 grams of fat
- 39.1 grams of protein
Now, 10 net carbs for one meal isn’t great, but if you’re really craving a quesadilla, it beats the average 40 net carbs they usually have! And sometimes I will eat a lower carb lunch to save carbs for a dinner that I’m really looking forward to.
So, I will share the recipe, but first, I want to touch briefly on keto for those who are new to the lifestyle.

How do you Stop Carb Cravings on Keto Diet?
There are a variety of reasons why you may be craving carbs while following a keto diet. Here are some quick suggestions on how to reduce carb cravings:
- Drink a glass of water
- Brush your teeth
- Go for a walk
- Exercise: meditation, yoga, or hiking
- Keep keto-friendly snacks on hand: hard boiled eggs, nuts, cheese, beef jerky, pickles, or pumpkin seeds

How to Make Keto Quesadillas

Whether you’re following a keto diet or not, these low carb quesadillas are so tasty, filling, and sure to leave you satisfied.
Let’s Talk About Low Carb Tortillas
The most important part of making keto quesadillas is starting with a low-carb tortilla. There are a few different brands that make them, so check out what your local grocery store has.
I am in New Mexico and found Carb Chopper tortillas from the Santa Fe Tortilla Company. Each tortilla has:
- Calories: 70
- Total Fat: 2.5g
- Total Carbs: 7g
- Dietary Fiber: 3g
- Net Carbs: 4g
- Protein: 4g

A tortilla with only 4 net carbs is pretty great! It allows you to satisfy your tortilla craving without blowing your entire daily net carb allowance. I can also assure you that these don’t taste “low carb”, they taste as delicious as full carb tortillas!
Ingredients in Keto Quesadillas
Makes 4 servings
- 8 low carb tortillas (net carbs 4g)
- 2 cups spinach
- 2 tbsp olive oil
- 12 oz top sirloin steak, cut into strips
- Salt and pepper, to taste
- 1/2 cup feta cheese
- 1/2 cup cream cheese
Preparing and Assembling Quesadillas
You’ll start by chopping the spinach, then set aside.

Warm olive oil in a pan over medium-high heat, then season the sliced sirloin steak well with salt and pepper.
Add sirloin steak to the pan with olive oil and cook 5 minutes, stirring occasionally.
Add in chopped spinach, feta, and cream cheese. Cook until cheese has melted, and stir well.

Place 1/4th of the mixture onto 4 tortillas, then top with another tortilla to create the quesadillas for keto.
Wipe the pan clean, add a little more olive oil, then lightly cook each quesadilla to brown each side, about 3 minutes per quesadilla.
Browning each side will give it a lovely buttery crunch to the outside of the quesadillas.

These pair really well with homemade salsa, sour cream, or ranch dressing. You could also serve them along side sauteed zucchini or a side salad. Yum!

Keto quesadillas with steak and feta cheese that are 9.7 net carbs per serving.
Ingredients
- 8 low-carb tortillas net carbs 4g
- 2 cups spinach
- 3 tbsp olive oil divided
- 12 oz top sirloin steak cut into strips
- 1/2 cup feta cheese
- 1/2 cup cream cheese
Instructions

Chop the spinach, then set aside.

Warm 2 tbsp olive oil in a pan over medium-high heat, then season the sliced sirloin steak well with salt and pepper.

Add sirloin steak to the pan with olive oil and cook 5 minutes, stirring occasionally.

Add in chopped spinach, feta, and cream cheese. Cook until cheese has melted, and stir well.

Divide mixture evenly onto 4 tortillas, then top with another tortilla to create the keto quesadillas.

Wipe the pan clean, add a little more olive oil, then lightly cook each quesadilla to brown each side, about 3 minutes per quesadilla.
