A month ago, it was one of the first cool days of the fall, and I was craving hot chocolate. My homemade hot chocolate is pretty amazing, but I happened to be working at the time, and decided to go visit a local coffee shop. I’m a New Mexican native, and am always looking for local favorites. I scanned the menu and my eyes naturally gravitated to the Mexican hot chocolate. It featured whole milk mixed with Mexican chocolate and notes of cinnamon, and my choice became easy. I HAD to try their Mexican hot chocolate!
All I can say is YUM!!
If there is such a thing as an adult hot chocolate, this is it, my friends. It had the rich creaminess of a whole milk hot chocolate, with brilliant notes of spiciness from the Mexican chocolate and warmth from the cinnamon.

It usually takes several attempts at a recipe before I am sure that it is perfect, but this time I got it right on the first try. I give most of the credit to the chocolate, but am nevertheless thrilled with how it turned out.
