Keto Potstickers
Potstickers are one of my top 5 favorite foods. I used to order them every time we went out to an Asian restaurant, but I stopped after I started my keto diet. The potsticker wrappers are delicious and sadly full of all the carbs.
But, did you know by swapping potsticker wrappers with provolone cheese, you can enjoy potstickers on a keto diet? They taste great, too! My carb-loving husband said they were just as good as the potstickers we get at Asian restaurants.
Here’s what you need for the potstickers:
- 10 slices provolone cheese
- 1/4 lb ground pork
- 1/3 cup cabbage, thinly sliced
- 1 tbsp soy sauce
- 1/2 tbsp sesame oil
- 2 tbsp water
- 1 squirt sriracha
Here’s what you need for the dipping sauce:
- 2 tbsp soy sauce
- 1/2 tbsp rice vinegar
- 1 tsp sesame oil
- 1 squirt sriracha
Start by preheating oven to 375 degrees. Grab 2 baking sheets and line them with parchment paper.
Line out provolone slices, keeping 1″ distance between each. Bake in preheated oven for 4 – 6 minutes, until the edges start to brown.
Meanwhile, brown ground pork in a pan. Once cooked through, transfer to a food processor along with cabbage, soy sauce, sesame oil, water, and sriracha. Blend until it forms a paste like consistency.
Remove cheese from the oven, then add 1 tablespoon of the filling to each wrapper.
Fold one side of the wrapper onto the other, forming a half circle.
From here, you have two options:
- Place these back in the oven on a low broil, for 2 minutes, until the surface browns.
- Heat a pot over medium-high heat, then pan fry the potstickers for a few seconds per side, until browned. Make sure your pan is hot enough, otherwise the potstickers will melt before they brown.
To make the sauce, combine ingredients and mix well.
Serve warm potstickers with sauce and enjoy!
